Learn about our pizza philosophy and what we look for in a great pizza.

We’re passionate about great pizza, and we believe that starts with great fundamentals. Here’s what we look for when reviewing pizza in Bali:

The Foundation: Dough is Everything

You can’t build a great pizza without a great foundation. The base/dough is the most important element of any pizza. We look for:

  • Proper fermentation - dough should have time to develop flavor
  • Right texture - should be chewy but not tough, with a nice crunch and a good crumb structure
  • Not too wet - the dough should hold its shape and not be soggy

Our Style Preference: Napoli-Inspired

We’re partial to a Napoli-style puff - that beautiful, crispy but airy crust that’s slightly charred on the outside but soft and chewy on the inside. We appreciate all styles of pizza, but a hand-stretched Napolitana (or Neo-Neapolitan) is our favourite.

The Perfect Balance

The sauce should be sweet and rich, avoiding too much acidic or a watery taste. We prefer it to be well-seasoned with salt, without being overpowered by dried herbs or overly concentrated. The amount of sauce should be just right to enhance the pizza, not dominate it.

There should be a generous amount of cheese - enough to achieve the ideal stretch and melt, but not so much that it turns greasy or covers the whole pizza.

Our Review Process

Reviews are always based on a the Margherita. It’s the ultimate test of a pizzeria’s skill. If they can’t make a great Margherita, they can’t make great pizza.

We always review based on a whole pizza - not pizza by the slice. Pizza by the slice, especially when reheated in a tropical climate, just doesn’t showcase the best version of itself.

Finally, we’re not food critics by profession, just pizza enthusiasts who know what we like. Our reviews are honest, personal, and focused on what matters most: the pizza itself.

What We Don’t Like

It’s all preference of course, but we’re not usually a fan of:

  • Coarse semolina - we prefer fine flour for a smoother texture.
  • Soggy centers - the sauce shouldn’t make the dough wet, and the pizza should be able to hold its toppings when you pick it up.
  • Overloaded toppings - less is often more and the pizza shouldn’t be overloaded.
  • Complicated sauces - a simple sauce with high-quality, well-seasoned tomatoes is all you need.
