Review of the Margherita pizza at Wild Habit in Seminyak, Bali — a beautiful crust and presentation, but uneven consistency and a sauce that left me wanting more.



I’ve been back to Wild Habit plenty of times, and their Margherita has often stood out as one of the best in Bali. This time, though, it was a reminder of how much consistency matters, as the pizza didn’t quite hit the same high mark.
The pizza arrived steaming hot, with a beautiful puffy crust and char that made it look every bit the part. On closer look, the base was softer than I’d like, sagging when lifted and lacking structure through the middle. The crust had some crispness on the edge, though it was a bit too chewey becoming tiring by the end. A dusting of coarse polenta on the outside added more texture than flavour, and the drizzle of oil across the top made it a bit too oily.
The cheese was fully melted into a thick layer, which meant the sauce struggled to come through. What I could taste was sweet and balanced but not especially rich, and I found myself wishing for a bit more. Mozzarella in smaller pockets would have let the tomato shine and lightened the whole thing.
It’s still a pretty pizza and enjoyable to eat, but not the clear standout I remembered. Wild Habit can be excellent, but on this occasion the execution didn’t quite match the promise.
NOTE: My prior review of Wild Habit was October 2023, and as you can see the pizza had better char, less oily, and a better mix of sauce and cheese.
