Bande Nere

The Margherita at Bande Nere comes out looking nice, with good leopard spotting on the rim.

The cheese is the star. It's buttery, fresh and milky, and I really liked it. The flavour overall is good too.

The base is where it slips. There's a fine semolina residue on the crust, though not much underneath, and the middle is a little oily. The crust is ever so slightly doughy and the base isn't especially light, so without much structure it goes floppy in the middle. I'd also have liked a bit more sauce.

Still a really good pizza. Sadly, Bande Nere has since closed.
