“A pretty, well-charred pizza let down by an overcooked sauce.”
Mrs Sippy is better known for its pool than its pizza, but it has a couple of big, fancy pizza ovens, so we gave one a go while we were there.
It comes out looking very pretty, with a nice crispy char. There's a bit of oil in the dough, and the crust is thick and a little doughy, with the base puffing up through the middle. It eats crispy and chewy, and the bottom isn't floury, which I appreciate. The basil is baked in and the cheese is nice.
The sauce is the weak point. It tastes overcooked and over-flavoured, with seasoning sprinkled over the top, and the tomatoes are acidic without much sweetness. For all that seasoning, the sauce itself could use more salt.
Pretty good, but not great.
