Old Man's

Old Man's is a Canggu institution, and the Margherita looks very pretty when it lands. It's generous too, with fresh mozzarella, a lot of grated parmesan over the top, whole basil leaves and nice char around the rim.

The crust isn't chasing the big Neapolitan puff, and that's fine. There's a little semolina on it, but not enough to get in the way.

The trouble is the sauce, or rather everything that's gone into it. There's garlic and dried oregano, and I don't think dried oregano belongs on a Margherita at all. It's salty, and with all that salty parmesan on top it ends up too much. One of our group didn't make it past the first slice.

At about 100k it's fair for the ingredients you get, but a Margherita should be simpler than this.
